    Cheesy Mashed Potato Bites

    These golden, oven-baked cheesy mashed potato bites are perfect for transforming leftover mashed potatoes into a delicious appetizer or an easy homemade side dish. They are crispy on the outside, melty on the inside, and a great way to avoid food waste. A simple, quick, and economical recipe that will delight everyone!

    Ingredients:

    2 cups cold mashed potatoes (leftover or homemade)
    1 cup shredded cheddar cheese
    2 eggs
    2 tbsp chopped chives or green onions
    1/4 cup grated Parmesan cheese (optional)
    Salt and pepper to taste
    1/2 tsp garlic powder (optional)

    Preparation:

    Preheat the oven to 200°C (400°F) and grease a mini muffin tin.

    In a bowl, combine the cold mashed potatoes, cheddar cheese, eggs, chives, Parmesan cheese, garlic powder, salt, and pepper.
    To assemble the bites: Fill the muffin cups three-quarters full without packing them down.
    Bake for 20–25 minutes, until the bites are golden brown and slightly puffed.
    To serve warm: Let them cool for a few minutes before unmolding.

    Tips for perfect bites:
    Use cold mashed potatoes for better texture during baking.

    The creamier and butterier the mashed potatoes, the more melt-in-your-mouth the inside will be.
