Cheesy Loaded Potato & Meatloaf Casserole

This Loaded Potato & Meatloaf Casserole is the perfect blend of creamy mashed potatoes, juicy seasoned beef, and gooey melted cheddar cheese. It’s an easy, crowd-pleasing meat and potatoes dinner that’s ideal for weeknights or cozy Sunday suppers.
Ingredients:
For the Meatloaf Layer:
1.5 pounds ground beef
1 onion, finely chopped
2 cloves garlic, minced
1/2 cup breadcrumbs
1/4 cup milk
1 egg
1 tablespoon Worcestershire sauce
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup ketchup
For the Creamy Potato Topping:
2 pounds potatoes, peeled and sliced
1/2 cup sour cream
1/4 cup milk
2 tablespoons butter
1 cup shredded cheddar cheese
1/4 cup chopped green onions
Salt and pepper to taste
Instructions:
1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13” baking dish.
2. In a large bowl, mix together the ground beef, onion, garlic, breadcrumbs, milk, egg, Worcestershire sauce, salt, and pepper. Press the beef mixture into the bottom of the baking dish.
3. Spread the ketchup evenly over the top of the meatloaf.
4. Bake for 25 minutes.
5. While the meatloaf bakes, boil the potatoes in a large pot of salted water until tender (about 15 minutes). Drain and mash with sour cream, milk, butter, salt, and pepper.
6. Carefully spread the mashed potatoes on top of the partially cooked meatloaf layer. Sprinkle with shredded cheddar cheese and green onions.
7. Return to the oven and bake for another 20 minutes, or until the cheese is golden and bubbly.
8. Let rest for 10 minutes before slicing and serving.
