    Cheesy Hash Brown Casserole

    This Cheesy Hash Brown Casserole is the ultimate easy, creamy, and cheesy comfort food! Made with crispy hash browns, melty cheddar cheese, and a crunchy cornflake topping, it’s the perfect dish for breakfast, brunch, or as a side for your next family gathering.

    Ingredients:

    30 ounces frozen shredded hash browns, thawed (I used Ore Ida)
    ½ cup diced yellow onion for a savory kick
    1 can (10.5 ounces) Campbell’s Cream of Chicken Soup for creamy texture
    1 ½ cups sour cream (regular or light) for extra richness
    ½ cup butter, melted and divided for that buttery flavor
    ½ teaspoon salt to enhance the taste
    ½ teaspoon freshly ground black pepper (or to taste)
    2 ½ cups shredded sharp cheddar cheese for gooey goodness
    2 cups corn flakes, crushed for a crispy topping

    Instructions:

    Preheat oven to 350°F and grease a 13” x 9” baking dish with nonstick spray.
    In a large bowl, mix hash browns, diced onion, soup, sour cream, ¼ cup melted butter, salt, pepper, and shredded cheddar cheese until well combined.
    Transfer the mixture into the prepared baking dish and spread evenly.
    Toss the crushed corn flakes with the remaining ¼ cup melted butter, then sprinkle over the casserole.
    Bake for 50-55 minutes or until golden brown and bubbly.

    Pro Tips:

    Storage: Store leftovers in an airtight container in the fridge for up to 4 days. Reheat with a sprinkle of water to keep the cheesy goodness fresh.
    Make-Ahead Option: Assemble the casserole, cover, and refrigerate overnight. Let it sit at room temperature for 30 minutes before baking as directed.
