    Cheesy Grated Potato Pie

     

    Cheesy Grated Potato Pie

     

    Looking for a quick, delicious, and budget-friendly meal? This Cheesy Grated Potato Pie is the perfect option! Made with simple pantry ingredients, it’s crispy, cheesy, and packed with flavor.

    Ingredients:

    For the Filling:

    2 large potatoes, grated

    1 cup shredded cheese (cheddar, mozzarella, or your favorite!)

    1/4 cup chopped fresh parsley

    Salt and pepper, to taste

    For the Dough:

    2 eggs

    1 cup plain yogurt

    2 tablespoons olive oil

    1 teaspoon baking powder

    1 teaspoon salt

    Instructions:

    Preheat your oven to 375°F (190°C).
    In a bowl, mix grated potatoes, shredded cheese, parsley, salt, and pepper.
    In another bowl, whisk eggs, yogurt, olive oil, baking powder, and salt until smooth.
    Roll out the dough on a floured surface to 1/4 inch thickness.
    Place the dough into a 9-inch (23 cm) pie dish and fill it with the potato-cheese mixture.
    Fold the edges of the dough over the filling for a rustic crust.
    Brush the crust lightly with water and bake for 35-40 minutes or until golden brown.
    Serve hot and enjoy this crispy, cheesy delight!
