    Cheesy Fiesta Chicken Casserole

    Looking for an easy weeknight dinner recipe that’s loaded with flavor? This Cheesy Fiesta Chicken Casserole combines tender shredded chicken, black beans, corn, salsa, and pasta all baked together with melty Mexican cheese. It’s the perfect family dinner casserole hearty, creamy, and ready in under an hour!

     

    Ingredients:

    2 ½ cups cooked and shredded chicken

    1 cup sweet corn kernels

    1 (15 oz) can black beans, drained and rinsed

    1 cup salsa (mild or spicy, your choice)

    1 cup sour cream

    10 oz pasta (penne, rotini, or shells)

    2 tbsp taco seasoning

    2 cups Mexican cheese blend

     

    Directions:

    1. Preheat oven to 350°F (175°C).

    2. Cook pasta in boiling water, 2 minutes short of package instructions. Drain and set aside.

    3. In a large mixing bowl, combine sour cream, salsa, and taco seasoning.

    4. Stir in the shredded chicken, corn, black beans, and 1 cup of cheese until well mixed.

    5. Add the cooked pasta to the mixture and stir until evenly coated.

    6. Transfer everything into a greased casserole dish and top with the remaining cheese.

    7. Bake for 20–25 minutes or until bubbly, cheesy, and golden.

    8. Let rest for a few minutes, then serve hot and enjoy the fiesta of flavors!

    Cook Time: 40 minutes
    Total Time: 45 minutes
    Servings: 6

    Use rotisserie chicken for extra convenience.
