    Cheesy & Easy Low Carb Zucchini Snack

     

    This Cheesy & Easy Low Carb Zucchini Snack is a quick and delicious treat, perfect for anyone on a low-carb diet. Combining shredded zucchini with mozzarella and Parmesan cheese creates a savory, cheesy bite that’s easy to make. With just a few simple ingredients and a short bake time, it’s ideal for a snack or appetizer. The added almond flour and Italian seasoning give it extra flavor and texture. Enjoy a crispy, cheesy snack that’s both satisfying and healthy!

    Ingredients:

    – 2 cups shredded & firmly packed zucchini
    – 1 large egg
    – 4 ounces shredded mozzarella cheese
    – 1/4 cup almond flour
    – 1 teaspoon Italian seasoning
    – 1/2 teaspoon salt
    – 1/4 teaspoon ground white pepper
    – 1 tablespoon melted salted butter
    – 1/4 cup shredded Parmesan cheese
    – 1 tablespoon finely chopped parsley

    Instructions:

    1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

    2. In a large bowl, combine the shredded zucchini, egg, mozzarella cheese, almond flour, Italian seasoning, salt, and white pepper. Mix well.

    3. Stir in the melted butter until fully incorporated.

    4. Scoop the mixture onto the prepared baking sheet, forming small mounds.

    5. Sprinkle each mound with Parmesan cheese.

    6. Bake for 15-20 minutes, or until golden brown and crispy.

    7. Garnish with finely chopped parsley before serving.
