Ingredients
3 cups cooked shredded chicken (rotisserie works great)
2 medium zucchini, thinly sliced
1 cup shredded mozzarella cheese
½ cup shredded Parmesan cheese
¾ cup cream cheese or sour cream
2 cloves garlic, minced
½ teaspoon salt
¼ teaspoon black pepper
½ teaspoon Italian seasoning
1 tablespoon olive oil or butter
Fresh parsley (optional, for garnish)
Instructions
Preheat oven to 375°F (190°C) and lightly grease a baking dish.
Heat olive oil or butter in a skillet over medium heat. Add garlic and sauté briefly until fragrant.
Stir in the shredded chicken, cream cheese (or sour cream), salt, pepper, and Italian seasoning until creamy and well combined.
Layer half of the zucchini slices in the baking dish.
Spread the creamy chicken mixture evenly over the zucchini.
Top with remaining zucchini slices, then sprinkle mozzarella and Parmesan cheese evenly over the top.
Bake uncovered for 25–30 minutes, until bubbly and golden.
