Ingredients:
For the Rice:
3 tbsp vegetable oil
2 cups long-grain rice
1 small can (8 oz) tomato sauce
1 tbsp chicken bouillon powder (or 1 cube)
2 cloves garlic, minced
½ tsp salt (or to taste)
½ tsp paprika
¼ tsp bay powder (or crushed bay leaf)
4 cups water
For the Chicken & Shrimp:
2 chicken breasts, cubed
1 lb shrimp, peeled and deveined
1 tsp onion powder
1 tsp garlic powder
1 tsp paprika
Salt and pepper to taste
2 tbsp vegetable oil
For the Queso Sauce:
1 cup evaporated milk
1 cup shredded Monterey Jack cheese
½ cup queso blanco
2 tbsp diced green chilies
Directions:
Heat oil in a pot over medium heat. Add garlic and sauté for 1 minute. Stir in rice and toast for 2-3 minutes. Add tomato sauce, bouillon, seasonings, and water. Cover and simmer 15–20 minutes until rice is fluffy.
Season chicken with garlic powder, onion powder, paprika, salt, and pepper. In a skillet, cook chicken for 5–7 minutes, then add shrimp and cook until pink.
Combine evaporated milk, Monterey Jack, queso blanco, and green chilies in a saucepan. Stir until melted and smooth.
Mix rice with chicken and shrimp, drizzle with queso sauce, and stir to coat. Serve warm and enjoy!
