Cheesy Chicken Fritters
These Cheesy Chicken Fritters are a deliciously crispy and cheesy treat, made with mozzarella cheese and fresh dill. Ingredients for Chicken Fritters:
1 1/2 lbs chicken breasts (3 large)
2 large eggs
1/3 cup mayonnaise
1/3 cup all-purpose flour (or cornstarch or potato starch for gluten-free)
4 oz mozzarella cheese (1 1/3 cups shredded)
1 1/2 Tbsp chopped fresh dill
1/2 tsp salt (or to taste)
1/8 tsp black pepper
2 Tbsp extra light olive oil (or any high-heat cooking oil)
Ingredients for Garlic Aioli Dip (Optional):
1/3 cup mayonnaise
1 garlic clove, pressed
1/2 Tbsp lemon juice
1/4 tsp salt
1/8 tsp black pepper
Preparation:
1. Prepare the Chicken: Using a sharp knife, dice chicken breasts into 1/3″ thick pieces and place them in a large mixing bowl. Tip: Partially freezing the chicken makes it easier to slice into pieces.
2. Make the Fritter Mixture: Add the remaining ingredients for the chicken fritters to the bowl: 2 eggs, 1/3 cup mayonnaise, 1/3 cup flour (or cornstarch or potato starch for gluten-free), 1 1/3 cups shredded mozzarella, 1 1/2 Tbsp dill, 1/2 tsp salt, and 1/8 tsp black pepper. Stir until well combined. Cover with plastic wrap and refrigerate for 2 hours or overnight.
3. Cook the Fritters: Heat a large non-stick pan over medium heat and add 2 Tbsp olive oil. Once the oil is hot, add the chicken fritter mixture in heaping tablespoonfuls. Slightly flatten with the back of the spoon and sauté uncovered for 3-4 minutes on the first side. Flip and cook for an additional 3 minutes or until golden brown and the chicken is fully cooked. Repeat with the remaining fritters, adding more oil as needed.
4. Make the Garlic Aioli Dip (Optional): In a small bowl, combine the mayonnaise, pressed garlic, 1/2 Tbsp lemon juice, 1/4 tsp salt, and 1/8 tsp black pepper. Stir until smooth.
Recipe Notes:
To check for doneness, cut a fritter in half the chicken should be completely white inside. Adjust the heat if the fritters are browning too quickly.
