    Cheesy Cheddar Chicken Curry

     

    This Cheddar Chicken Curry brings a delicious twist to traditional curry by adding rich, melted cheddar cheese for a creamy texture. The blend of spices, including curry powder, turmeric, and cumin, creates a warm and savory base that pairs perfectly with tender chicken. Coconut milk adds a hint of sweetness, while fresh spinach and lime juice give it a burst of freshness. Serve it over rice or with naan for a cozy, satisfying meal. Garnished with cilantro, this dish is perfect for a flavorful family dinner!

    Ingredients:

    For the Chicken:

    1 lb (450 g) boneless, skinless chicken thighs or breasts, cut into bite-sized pieces

    2 tbsp olive oil

    1 onion, finely chopped

    2 cloves garlic, minced

    1 tbsp fresh ginger, grated

    1 tbsp curry powder (adjust to taste)

    1/2 tsp turmeric

    1/2 tsp cumin

    1/2 tsp paprika

    Salt and pepper, to taste

    For the Sauce:

    1 can (14 oz) coconut milk

    1/2 cup chicken broth

    1 cup sharp cheddar cheese, grated

    2 cups fresh spinach (or kale)

    1 tbsp fresh lime juice

    Fresh cilantro, chopped (for garnish)

    Instructions:

    1. Cook the Chicken:

    In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté for 5 minutes until softened.

    Add minced garlic and grated ginger, cooking for 1 minute until fragrant.

    Stir in curry powder, turmeric, cumin, and paprika, along with salt and pepper. Toast the spices for 1 minute.

    Add chicken pieces, coating them in spices. Cook for 5-7 minutes, browning on all sides.

    2. Prepare the Sauce:

    Pour in coconut milk and chicken broth, stirring to combine. Bring to a gentle simmer.

    Simmer for 10-15 minutes, until chicken is fully cooked and sauce thickens slightly.

    3. Add the Cheese and Spinach:

    Lower heat, stir in grated cheddar cheese until melted and creamy.

    Add fresh spinach, cooking until wilted. Adjust seasoning with salt, pepper, and lime juice.

    4. Serve:

    Serve over rice, quinoa, or alongside naan bread.

    Garnish with chopped cilantro for a fresh finish.

    Tips:

    Add sliced jalapeños or red pepper flakes for extra heat.

    Swap chicken with shrimp or vegetables for a variation.
