    Cheesy Cajun Garlic Chicken Rotini Skillet

     

    Looking for a bold and creamy one-skillet pasta dish? This Cheesy Cajun Garlic Chicken Rotini Skillet is packed with flavor and perfect for busy weeknights! With tender chunks of seasoned chicken, garlic-infused cream sauce, and three types of melted cheese, this easy Cajun pasta recipe is a cheesy comfort food dream come true. It’s a must-try for fans of one-pot meals, creamy chicken pasta, and Southern-style dinners!

     

    Ingredients:

    2 boneless, skinless chicken breasts, cut into bite-size chunks

    12 oz rotini pasta

    2 tbsp olive oil

    2 tbsp Cajun seasoning

    1 tsp garlic powder

    1/2 tsp onion powder

    Salt and black pepper to taste

    4 cloves garlic, minced

    1 tbsp butter

    1 cup heavy cream

    1/2 cup chicken broth

    1 cup shredded mozzarella cheese

    1/2 cup grated Parmesan cheese

    1/2 cup shredded cheddar cheese

    Fresh chopped parsley for garnish

     

    Instructions:

    1. Cook the Pasta:
    Bring a large pot of salted water to a boil. Cook rotini pasta until al dente, drain, and set aside.

    2. Season & Cook Chicken:
    In a large skillet, heat olive oil over medium-high heat. Toss chicken with Cajun seasoning, garlic powder, onion powder, salt, and pepper. Cook in skillet until browned and cooked through (6–7 minutes). Remove and set aside.

    3. Make Creamy Cajun Sauce:
    In the same skillet, melt butter. Add minced garlic and sauté for 1 minute until fragrant. Stir in chicken broth and heavy cream, bringing to a simmer.

    4. Add Cheese:
    Stir in mozzarella, Parmesan, and cheddar until the sauce is smooth, rich, and cheesy.

    5. Combine & Serve:
    Return pasta and chicken to the skillet. Toss everything together until coated in the cheesy Cajun garlic sauce. Let it simmer for 2–3 minutes to meld flavors.

    6. Garnish and Enjoy:
    Sprinkle with chopped parsley and serve hot with extra cheese if desired!
