    This Cheesy Beef and Potato Casserole is the ultimate comfort food, combining savory ground beef, tender potatoes, and creamy mushroom soup. Perfectly layered and slow-cooked to tender perfection, it’s a hearty family dinner everyone will love. Topped with melted cheddar cheese and fresh parsley, this dish is the ideal easy dinner recipe for busy weeknights. With just a few ingredients, you can enjoy a cheesy casserole that’s sure to satisfy. Great for crockpot recipes and beef lovers!

    Ingredients:

    1 ½ lbs ground beef

    1 medium onion, chopped

    3 cloves garlic, minced

    1 red bell pepper, diced

    5 large potatoes, peeled and cut into chunks or diced

    1 can (10.75 oz) condensed cream of mushroom soup

    ½ cup milk

    1 cup shredded cheddar cheese

    1 tsp salt

    ½ tsp black pepper

    ¼ tsp paprika

    2 tbsp fresh parsley, chopped (for garnish)

    Instructions:

    1. Cook the beef mixture: Heat a skillet over medium heat. Add the ground beef, onion, garlic, and bell pepper. Cook until the beef is browned and the vegetables are softened. Drain any excess fat. This step makes the savory beef filling for your comfort food casserole.

    2. Prepare the soup mixture: In a small bowl, whisk together the cream of mushroom soup, milk, salt, pepper, and paprika. This creamy mixture will give the casserole its rich flavor.

    3. Layer in the slow cooker: Place half of the potato chunks in the bottom of a slow cooker. Add half of the beef mixture and then half of the soup mixture on top. Repeat the layering with the remaining potatoes, beef, and soup mixture for a hearty family meal.

    4. Cook the casserole: Cover the slow cooker and cook on low heat for 5-6 hours, or until the potatoes are tender. The slow cooking process ensures the casserole is perfectly blended and flavorful.

    5. Add cheese and garnish: Sprinkle the shredded cheddar cheese over the top of the casserole. Cover and cook for another 20 minutes, or until the cheese has melted to cheesy perfection. Garnish with fresh parsley before serving to add a pop of color and freshness.
