1/2 cup (115g) grated cheddar cheese
1/4 cup (55g) grated Parmesan cheese
1 tbsp (15g) chopped fresh parsley
Salt and pepper to taste
For the Provolone Sauce:
2 tbsp (30g) unsalted butter
2 garlic cloves, minced
1 cup (250ml) heavy cream
1 cup (115g) grated provolone cheese
Salt and pepper to taste
For the Assembly:
1 package (12 oz/340g) cheese-filled tortellini
1/4 cup reserved pasta water
Chopped parsley or thyme for garnish
Instructions:
1. Prepare the Tortellini Filling:
Mix shredded beef, cheddar cheese, Parmesan cheese, and parsley in a medium bowl. Season with salt and pepper.
2. Cook the Tortellini:
Boil salted water in a large pot and cook tortellini according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
3. Make the Provolone Sauce:
Melt butter in a medium saucepan over medium heat. Add minced garlic and cook for 1 minute. Stir in heavy cream and simmer for 2-3 minutes. Lower the heat, then mix in grated provolone cheese until smooth. Season with salt and pepper.
4. Assemble the Dish:
Combine cooked tortellini, provolone sauce, and 1/4 cup reserved pasta water in a large skillet. Toss until evenly coated.
5. Add the Filling:
