    Caramelized Sweet Potatoes with Maple, Feta & Crunchy Walnuts

    Tender caramelized sweet potatoes roasted with maple syrup, topped with tangy feta and crunchy walnuts. This maple roasted sweet potato recipe is perfect as a healthy sweet potato side dish for dinner or special occasions.

    Ingredients:

    2 large sweet potatoes, peeled and cut into 1-inch (2.5 cm) cubes
    2 tbsp olive oil
    2 tbsp pure maple syrup
    ½ tsp smoked paprika (optional)
    Salt and black pepper, to taste
    ½ cup crumbled feta cheese (75 g)
    ¼ cup toasted walnuts, roughly chopped (30 g)
    1 tbsp extra maple syrup, for drizzling

    Instructions:

    Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Combine sweet potato cubes with olive oil, maple syrup, smoked paprika, salt, and black pepper in a large bowl. Coat evenly for perfect maple roasted sweet potatoes.

    Roast for 25–30 minutes, flipping halfway, until caramelized sweet potatoes are golden, tender, and slightly crisp on the edges.

    Transfer roasted sweet potatoes to a serving platter.

    Sprinkle with crumbled feta and toasted walnuts for a delicious feta walnut sweet potato recipe.

    Drizzle with maple syrup and serve warm as a healthy sweet potato side dish.

    Make-ahead: Roast sweet potatoes in advance and reheat for quick weeknight meals.
