    Blueberry Cream Cheese Egg Rolls

     

    These homemade Blueberry Cream Cheese Egg Rolls are the ultimate crispy dessert! Filled with a luscious cream cheese mixture and juicy blueberry filling, then fried to golden perfection and dusted with powdered sugar. A fun and easy sweet treat perfect for parties, holidays, or family dessert nights!

    Ingredients:

     

    For the Blueberry Filling:
    2 cups fresh blueberries (or frozen, thawed)
    ⅓ cup sugar
    1 tablespoon lemon juice
    7 tablespoons water, divided
    3 tablespoons cornstarch
    For the Cream Cheese Filling:
    8 oz cream cheese, room temperature
    ⅓ cup sugar
    1 teaspoon lemon juice
    1 teaspoon vanilla extract
    For Frying & Finishing:
    12 egg roll wrappers
    2 cups vegetable oil (for frying)
    ¼ cup powdered sugar, for dusting

    Directions:

    Prepare the Blueberry Filling
    In a saucepan over medium heat, combine blueberries, sugar, water, and lemon juice.
    Cook for 3–4 minutes until blueberries burst.
    Mix cornstarch with remaining water and stir into blueberry mixture.
    Cook until thickened, remove from heat, and let cool completely.

    Make the Cream Cheese Filling
    In a bowl, beat cream cheese until fluffy (2–3 minutes).
    Add sugar, lemon juice, and vanilla; beat another 2 minutes until smooth.

    Assemble the Egg Rolls
    Place 2 tablespoons cream cheese mixture in the center of an egg roll wrapper.
    Add 1 spoonful of blueberry filling on top.
    Moisten wrapper edges with water, fold in sides, and roll tightly to seal.

    Fry to Crispy Perfection
    Heat oil to 375°F (190°C) in a deep skillet.
    Fry egg rolls in small batches until golden brown on all sides (2–3 minutes per batch).
    Transfer to a paper towel-lined plate.
    Dust with powdered sugar before serving.

    Cook Time: 5 minutes per batch
    Total Time: 35 minutes
    Servings: 12 egg rolls

    Tips & Variations:

    Swap blueberries for strawberries, raspberries, or cherries.
    For a lighter option, bake at 400°F (200°C) for 12–15 minutes instead of frying.
    Drizzle with white chocolate or serve with vanilla ice cream for extra indulgence.
