Ingredients:

4 skinless salmon fillets (6 oz each)

2 cups fresh spinach

1/2 cup cream cheese (softened)

1/3 cup grated Parmesan cheese

2 cloves garlic (minced)

1 tbsp olive oil

1 tsp paprika

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp black pepper

Salt to taste

Lemon wedges (for serving)

Instructions:

1. Prepare the Spinach Filling

Sauté fresh spinach in a skillet over medium heat until wilted. Drain any excess liquid.

In a bowl, mix spinach, cream cheese, Parmesan cheese, minced garlic, salt, and pepper. Set aside.

2. Prep the Salmon

Slice a horizontal pocket into each salmon fillet, being careful not to cut all the way through.

Stuff the pockets with the creamy spinach-Parmesan filling.

3. Season the Salmon

In a small bowl, combine paprika, garlic powder, onion powder, black pepper, and salt.

Generously rub this spice mix onto the tops of the stuffed salmon fillets.

4. Cook the Salmon

Heat olive oil in a skillet over medium-high heat.

Sear each salmon fillet for 2–3 minutes per side until blackened and crispy.

Transfer salmon to a preheated oven (350°F/175°C) and bake for 10–12 minutes until fully cooked.

5. Serve

Serve your blackened salmon hot with lemon wedges for a zesty finish. Pair with roasted vegetables, fluffy rice, or a fresh salad for the perfect meal.

Tips for the Best Blackened Salmon

Add a dash of cayenne pepper to the seasoning blend for a spicier kick.

Swap cream cheese for ricotta if you prefer a lighter filling.

Try grilling the salmon for a smoky flavor.
