Ingredients:
1 tbsp olive oil
1 lb ground beef
1 small onion, finely chopped
2 cloves garlic, minced
1 tsp ground cumin
1 tsp paprika
1/2 tsp chili powder
Salt and pepper, to taste
1 cup shredded cheddar cheese
1 package (14 oz) refrigerated pie crusts
1 egg, beaten (for egg wash)
Instructions:
Heat olive oil in a large skillet over medium-high heat.
Sauté the onion for 3–4 minutes until soft.
Add garlic and cook 1–2 minutes until fragrant.
Add ground beef, cooking until browned. Break up large chunks as it cooks.
Stir in cumin, paprika, chili powder, salt, and pepper. Cook 2–3 minutes until aromatic.
Remove from heat and let cool slightly.
Mix in shredded cheddar cheese until well combined.
Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
Unroll the pie crusts and cut into circles (about 4–5 inches).
Place a spoonful of the beef & cheese filling in the center of each circle.
Fold the dough over to form a half-moon shape. Press edges with a fork to seal.
Brush the tops with beaten egg for a golden, glossy finish.
Arrange empanadas on the prepared baking sheet.
Bake 20–25 minutes or until golden brown and flaky.
