    Banana Pudding Tiramisu

     

    The Banana Pudding Tiramisu is a delightful fusion of two classic desserts, combining the creaminess of banana pudding with the richness of tiramisu. Layers of coffee-soaked ladyfingers, smooth banana pudding, and velvety mascarpone cheese create an indulgent treat that’s both comforting and elegant. Perfect for any occasion, this dessert offers a harmonious blend of flavors that will impress your guests. The light dusting of cocoa powder adds a finishing touch to this decadent creation. Serve it chilled for the ultimate dessert experience!

    Ingredients:

    – 1 cup strong brewed coffee, cooled
    – 2 tablespoons rum or coffee liqueur (optional)
    – 1 package ladyfinger cookies
    – 4 large bananas, sliced
    – 1/2 cup sugar
    – 4 large egg yolks
    – 1/4 cup all-purpose flour
    – 2 cups milk
    – 1 teaspoon vanilla extract
    – 8 oz (225g) mascarpone cheese
    – 1 cup heavy whipping cream
    – Cocoa powder, for dusting

    Instructions:

    1. Create the Banana Pudding: In a saucepan, whisk together sugar, egg yolks, and flour. Gradually whisk in milk. Cook over medium heat, stirring frequently, until the mixture thickens and just begins to boil. Remove from heat, stir in vanilla extract, and allow the pudding to cool completely.

    2. Prepare the Coffee Mixture: In a shallow dish, mix the cooled coffee with rum or coffee liqueur, if using. Set aside.

    3. Assemble the Tiramisu: Dip each ladyfinger quickly into the coffee mixture, soaking both sides. Arrange a layer of soaked ladyfingers at the bottom of a 9×9-inch dish.

    4. Layer with Pudding and Bananas: Spread half of the cooled banana pudding over the ladyfingers. Add a layer of sliced bananas on top.

    5. Prepare the Mascarpone Layer: Beat the mascarpone cheese in a large bowl until smooth. In a separate bowl, whip the heavy cream until stiff peaks form, then fold it into the mascarpone. Spread half of this mascarpone mixture over the bananas.

    6. Repeat the Layers: Add another layer of soaked ladyfingers, followed by the remaining banana pudding, bananas, and mascarpone mixture.

    7. Chill & Serve: Cover the tiramisu and refrigerate for at least 4 hours, or preferably overnight. Before serving, dust the top with cocoa powder and garnish with additional banana slices if desired.
