Ingredients:
– 1 cup strong brewed coffee, cooled
– 2 tablespoons rum or coffee liqueur (optional)
– 1 package ladyfinger cookies
– 4 large bananas, sliced
– 1/2 cup sugar
– 4 large egg yolks
– 1/4 cup all-purpose flour
– 2 cups milk
– 1 teaspoon vanilla extract
– 8 oz (225g) mascarpone cheese
– 1 cup heavy whipping cream
– Cocoa powder, for dusting
Instructions:
1. Create the Banana Pudding: In a saucepan, whisk together sugar, egg yolks, and flour. Gradually whisk in milk. Cook over medium heat, stirring frequently, until the mixture thickens and just begins to boil. Remove from heat, stir in vanilla extract, and allow the pudding to cool completely.
