    Banana Bread Cake with Cream Cheese Frosting

     

    This Banana Bread Cake is the ultimate fusion of moist, flavorful banana bread and a soft, indulgent banana cake, all topped with a rich, tangy cream cheese frosting. Perfect for breakfast, dessert, or a sweet treat any time!

    Ingredients:

    For the Banana Bread Cake:

    1 ½ cups mashed ripe bananas (about 3-4 bananas)
    2 cups all-purpose flour
    1 teaspoon baking soda
    ¼ teaspoon salt
    ½ cup unsalted butter, softened
    1 cup granulated sugar
    ½ cup brown sugar, packed
    2 large eggs
    1 teaspoon vanilla extract
    ½ cup buttermilk (or milk + 1 tbsp lemon juice/vinegar)

    For the Cream Cheese Frosting:

    8 oz cream cheese, softened
    ½ cup unsalted butter, softened
    3-4 cups powdered sugar (adjust to sweetness preference)

    Directions:

    Step 1: Prep the Ingredients

    Preheat your oven to 350°F (175°C).

    Grease and flour a 9×13-inch baking pan (or line with parchment paper).

    Step 2: Make the Banana Bread Cake Batter

    In a bowl, whisk together flour, baking soda, and salt. Set aside.
    In a large mixing bowl, beat butter, granulated sugar, and brown sugar until light and fluffy.
    Add eggs, one at a time, mixing well after each addition. Stir in vanilla extract.
    Mix in the mashed bananas until fully combined.
    Gradually add the dry ingredients, alternating with buttermilk, and mix until just combined. Avoid overmixing.

    Step 3: Bake the Cake

    Pour the batter into the prepared pan and spread evenly.

    Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

    Let the cake cool completely before frosting.

    Step 4: Make the Cream Cheese Frosting

    In a mixing bowl, beat cream cheese and butter until smooth.
    Gradually add powdered sugar, one cup at a time, mixing until fluffy.
    Spread the frosting evenly over the cooled cake.

    Step 5: Serve & Enjoy!

    Slice, serve, and enjoy this moist banana cake with a luscious cream cheese frosting!
