Ingredients:
4 boneless, skinless chicken breasts
2 tbsp olive oil
2 tsp garlic, minced
1 tsp Italian seasoning
Salt and black pepper to taste
2 cups cherry tomatoes, halved
3 cups fresh spinach leaves
1/4 cup balsamic vinegar
1 tbsp honey (optional, for a touch of sweetness)
1/4 cup shredded mozzarella or Parmesan cheese (optional)
Directions:
Sprinkle both sides of the chicken breasts with salt, black pepper, and Italian seasoning.
Heat 1 tbsp olive oil in a skillet over medium heat. Sear chicken for 6–7 minutes per side until golden brown and cooked through. Remove and set aside.
Add remaining olive oil to the skillet, then minced garlic. Cook for 30 seconds until fragrant. Add cherry tomatoes and sauté 3–4 minutes until softened.
Stir in spinach leaves and cook until wilted, about 2 minutes.
Pour in balsamic vinegar and stir in honey (if using). Simmer 1–2 minutes to reduce slightly.
Return the chicken to the skillet, spoon the tomato and spinach mixture over the top, and simmer 2–3 minutes for the flavors to blend.
Sprinkle with mozzarella or Parmesan just before serving.
