    Balsamic Chicken Bake with Fresh Tomatoes

     

    This Balsamic Chicken Bake with Fresh Tomatoes is a flavorful and easy weeknight dinner that’s perfect for the whole family. The chicken is marinated in a rich balsamic glaze with honey and garlic, then baked to perfection with juicy cherry tomatoes. Topped with fresh basil, parsley, and Parmesan, this dish offers a delightful blend of savory and tangy flavors. Ready in just 40 minutes, it’s an effortless way to bring a gourmet touch to your dinner table. Ideal for those looking for a quick, healthy, and delicious meal.

    Ingredients:

    – 4 boneless, skinless chicken breasts
    – Salt and pepper, to taste
    – 2 tablespoons olive oil
    – 1/4 cup balsamic vinegar
    – 2 tablespoons honey
    – 3 cloves garlic, minced
    – 1 teaspoon dried basil
    – 1 teaspoon dried oregano
    – 2 cups cherry tomatoes, halved
    – 1/4 cup fresh basil, chopped
    – 1/4 cup fresh parsley, chopped
    – 1/4 cup grated Parmesan cheese

    Instructions:

    1. Preheat your oven to 400°F (200°C).

    2. Season the chicken breasts with salt and pepper.

    3. In a small bowl, combine the olive oil, balsamic vinegar, honey, minced garlic, dried basil, and dried oregano. Whisk until well blended.

    4. Place the chicken breasts in a baking dish and pour the balsamic mixture over them, making sure each piece is fully coated.

    5. Add the halved cherry tomatoes to the baking dish, spreading them around the chicken.

    6. Bake in the oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).

    7. Remove the dish from the oven and sprinkle fresh basil, parsley, and grated Parmesan cheese over the top.

    8. Allow the chicken to rest for a few minutes before serving.
