Baked Potato Chicken and Broccoli Casserole 🥦 😋
Ingredients:
– 3 pounds red potatoes, diced into 1-inch pieces
– 4 tbsp butter, softened
– 1 cup sour cream
– ½ – 1 tsp kosher salt (adjust to taste)
– ½ tsp freshly ground black pepper
– ½ tsp granulated garlic or garlic powder
– ½ tsp paprika
– 1 medium-sized broccoli crown, chopped into bite-size florets (about 2-3 cups)
– 3 cups cooked chicken, diced
– 4 slices bacon, cooked until crispy and crumbled
– 2 cups shredded cheese (cheddar and mozzarella blend for extra flavor)
Instructions:
1. Preheat: Preheat the oven to 350°F (175°C). Grease a 10-inch square baking dish with butter or cooking spray.
2. Cook Potatoes: Boil the diced potatoes in a large pot until fork-tender, about 10-15 minutes. Drain and return to the pot.
3. Prepare Broccoli and Bacon: While the potatoes cook, steam or lightly roast the broccoli until tender. Cook the bacon until crispy, then crumble or chop it. Set aside.
4. Mash Potatoes: In the warm pot with the potatoes (heat turned off), thoroughly mash them. Add softened butter, sour cream, salt, pepper, garlic powder, and paprika. Mix well.
5. Combine Ingredients: Stir in the steamed broccoli, diced chicken, crumbled bacon, and half of the shredded cheese until evenly mixed.
6. Bake:Transfer the mixture to the prepared baking dish. Sprinkle the remaining cheese over the top. Bake for 20-25 minutes until the cheese is bubbly and slightly golden.
