Ingredients:
2 lb baby carrots
1 stick butter, melted
1 cup brown sugar
2 tbsp pancake syrup (or maple syrup)
1 tsp ground cinnamon
Salt & black pepper, to taste
Directions:
Preheat oven to 400°F (200°C) and butter a baking dish.
Place the baby carrots evenly in the prepared dish.
In a bowl, whisk together melted butter, brown sugar, pancake syrup, cinnamon, salt, and pepper.
Pour the mixture over the carrots and toss gently to coat.
Cover tightly with foil.
Bake for 60 minutes, or until carrots are fork-tender, stirring once halfway through if desired.
