4–5 cherry tomatoes, halved

2 tbsp cottage cheese

1 tbsp microgreens or sprouts

Salt & black pepper, to taste

For the Creamy Scrambled Eggs:

2 large eggs

1 tbsp cottage cheese

½ tbsp butter or olive oil

Salt & black pepper, to taste

1 tbsp microgreens, for garnish

 

Instructions:

Make the Avocado Cottage Cheese Toast

1. Toast the whole-grain bread until golden and crisp.
