    Avocado Cottage Cheese Toast with Creamy Scrambled Eggs

    Start your day right with this protein-packed, creamy avocado toast topped with cottage cheese and paired with soft, fluffy scrambled eggs. Perfect for a quick, healthy breakfast or a nutritious brunch that keeps you full and energized!

     

    Ingredients:

    For the Avocado Cottage Cheese Toast:

    1 slice whole-grain bread or rye bread, toasted

    ½ ripe avocado, mashed

    4–5 cherry tomatoes, halved

    2 tbsp cottage cheese

    1 tbsp microgreens or sprouts

    Salt & black pepper, to taste

    For the Creamy Scrambled Eggs:

    2 large eggs

    1 tbsp cottage cheese

    ½ tbsp butter or olive oil

    Salt & black pepper, to taste

    1 tbsp microgreens, for garnish

     

    Instructions:

    Make the Avocado Cottage Cheese Toast

    1. Toast the whole-grain bread until golden and crisp.

    2. Spread the mashed avocado evenly on top.

    3. Add halved cherry tomatoes and a dollop of cottage cheese.

    4. Season with salt and black pepper.

    5. Sprinkle fresh microgreens for added crunch and nutrition.

     

    Prepare the Creamy Scrambled Eggs

    1. Heat butter or olive oil in a non-stick skillet over medium heat.

    2. Crack the eggs into the pan, stirring gently.

    3. When almost set, fold in cottage cheese for creamy texture.

    4. Cook until soft and fluffy, then season with salt and black pepper.

     

    Assemble & Serve

    Plate your creamy scrambled eggs next to the avocado toast.

    Top with extra microgreens for freshness.

    Serve warm and enjoy a balanced, healthy breakfast packed with protein, fiber, and healthy fats.
