Ingredients (Serves 4):
1 liter chicken or vegetable broth
200g shrimp (peeled and deveined)
200g mushrooms, sliced
2 stalks lemongrass, cut and smashed
3 kaffir lime leaves, torn
3 Thai bird chilies, smashed (adjust to heat level)
3 cloves garlic, minced
1-inch piece galangal, thinly sliced
2 tomatoes, quartered
1 small onion, quartered
Juice of 2 limes
2 tablespoons fish sauce
1 teaspoon sugar
Fresh cilantro, for garnish
Directions:
Bring broth to a boil. Add lemongrass, kaffir lime leaves, galangal, garlic, and chilies. Simmer for 10 minutes to extract the aroma and flavor.
Add mushrooms, onion, and tomatoes. Simmer for 5 minutes until tender.
Add shrimp and cook for 3–5 minutes until pink and fully cooked.
Remove from heat, then stir in lime juice, fish sauce, and sugar. Adjust flavor more lime for tang, more fish sauce for saltiness.
Ladle into bowls, top with fresh cilantro, and serve hot.
