    Authentic Mexican Street Corn Dip Recipe

    This Mexican Street Corn Dip is a delicious and flavorful appetizer perfect for any occasion. Combining charred corn with creamy mayonnaise, sour cream, and a mix of cheeses, it’s topped with fresh cilantro and a hint of jalapeño spice. Serve it with crunchy tortilla chips for an irresistible dip that’s sure to impress. Quick and easy to make, this dip is a must-have for your next gathering!

    Ingredients:

    – 4 cups corn kernels (fresh or frozen, thawed)
    – 1 tablespoon olive oil
    – 1/2 cup mayonnaise
    – 1/2 cup sour cream
    – 1/2 cup cotija cheese, crumbled (or feta cheese)
    – 1/2 cup shredded cheddar cheese
    – 1/4 cup fresh cilantro, chopped
    – 1 jalapeño, seeded and finely chopped
    – 2 cloves garlic, minced
    – 1 teaspoon chili powder
    – 1/2 teaspoon smoked paprika
    – Juice of 1 lime
    – Salt and pepper to taste
    – Extra cotija cheese and cilantro for garnish
    – Tortilla chips for serving

    Directions:

    1. Heat the olive oil in a large skillet over medium-high heat. Add the corn kernels and cook, stirring occasionally, until slightly charred, about 5-7 minutes. Remove from heat and let cool slightly.

    2. In a large bowl, mix the mayonnaise, sour cream, cotija cheese, shredded cheddar cheese, cilantro, jalapeño, garlic, chili powder, smoked paprika, lime juice, salt, and pepper.

    3. Stir in the charred corn until everything is well combined.

    4. Transfer the dip to a serving bowl and garnish with extra cotija cheese and cilantro.

    5. Serve with tortilla chips and enjoy this delicious dip!
