    Amazing Stuffed Peppers

     

    Amazing Stuffed Peppers

    Ingredients:
    – 2.5 lbs ground beef
    – 2 large onions, grated/shredded
    – 2 tbsp olive oil
    – 1 tbsp cumin
    – 1/2 tsp coriander
    – 1 tsp salt
    – 1 tsp black pepper
    – 8 bell peppers of various colors
    – 1/2 tbsp turmeric
    – 1 can tomato sauce (16 oz)
    – 1 cup grated cheese
    – 1/2 cup chopped cilantro

    Instructions:

    1. Preheat the oven to 400°F or 200°C.
    2. In a large pan, heat 2 tbsp of olive oil over medium-high heat. Add the ground beef and cook for 15 minutes, or until browned.
    3. Add the grated onions and cook for another 5 minutes. Then, add the cumin, coriander, salt, and pepper. Mix well and let it simmer for 3 minutes before turning off the heat to cool.
    4. Cut a thin slice off the top of each bell pepper and set aside. Remove seeds and membranes, then rinse the peppers. Stuff them with the beef mixture from the pan and place the top slice back over the peppers.
    5. Open the tomato sauce can and add salt, pepper, and turmeric. Mix well and pour some sauce into a casserole pan to cover the bottom.
    6. Place the stuffed peppers over the sauce and pour the remaining tomato sauce on top. Cover the pan with foil and bake for 35 minutes.
    7. Remove the pan from the oven, take off the tops from the peppers, and sprinkle grated cheese over the meat inside. Replace the tops and bake for another 10 minutes.
    8. Once fully cooked, garnish with chopped cilantro and serve.
