Crispy-Golden Fried Chicken (Ayam Goreng Rangup) Recipe

Ingredients:
– 10 large pieces of chicken (make small cuts)
– 2 tbsp ginger-garlic paste
– 1 tbsp coarsely ground black pepper
– 3-4 coarsely ground coriander seeds
– 1 tsp fennel seeds (jintan manis)
– 2 sprigs fresh curry leaves, lightly crushed
– 1 heaped tsp turmeric powder
– 2-3 tbsp plain chili powder
– 1 tbsp cumin powder
– 1 tbsp cornflour
– Salt to taste
– Little water
Steps:
1. Prepare the Chicken: Place the chicken in a large bowl or pot. Make small cuts in the chicken pieces.
2. Marinate: Marinate the chicken with ginger-garlic paste, black pepper, coriander seeds, fennel seeds, curry leaves, turmeric powder, chili powder, cumin powder, cornflour, and salt. Add a little water to keep the paste moist. Mix well to ensure all pieces are coated.
3. Refrigerate: Set the marinated chicken aside for a minimum of 3 hours or overnight. Keep it refrigerated.
4. Bring to Room Temperature: Remove the marinated chicken from the fridge at least 30 minutes to 1 hour before frying.
5. Fry the Chicken:
– Heat oil in a deep fryer or a large pan over high flame.
– Drop in the chicken pieces, deep frying on both sides initially.
– Reduce the flame to medium and continue frying until the chicken is crispy and well cooked.
6. Serve: Enjoy your crispy-golden fried chicken hot!
Tips:
– Ensure the oil is hot before adding the chicken to achieve a crispy texture.
– Frying on medium heat after the initial high heat helps cook the chicken thoroughly without burning.
