Banana Upside-Down Cake

Ingredients:
– 3 ripe bananas
– 1/3 cup melted unsalted butter
– 1 cup packed brown sugar
– 1/2 cup chopped nuts (optional)
– 2 cups all-purpose flour
– 1 1/2 teaspoons baking powder
– 1/2 teaspoon baking soda
– 1/4 teaspoon salt
– 1/2 cup softened unsalted butter
– 1 cup granulated sugar
– 2 large eggs
– 1 teaspoon vanilla extract
– 1 1/4 cups buttermilk
Instructions:
Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
In a small bowl, mix melted butter and brown sugar. Spread this mixture evenly over the bottom of the prepared pan. Arrange sliced bananas on top and sprinkle with chopped nuts if desired.
In a separate bowl, whisk together flour, baking
powder, baking soda, and salt.
In a large bowl, cream together softened butter and granulated sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla extract.
Gradually mix in the dry ingredients, alternating with buttermilk. Begin and end with the dry ingredients. Mix until just combined.
Pour the batter over the bananas in the pan, spreading it evenly.
Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
Allow the cake to cool in the pan for 10 minutes, then invert it onto a serving platter.

1. To make it nut-free, omit the chopped nuts or substitute with seeds like sunflower or pumpkin seeds.
2. For a dairy-free option, replace butter with margarine and buttermilk with dairy-free milk mixed with lemon juice or vinegar.
