Reese’s Peanut Butter Cookie Pie
Ingredients:
– 1 9” refrigerated pie crust, thawed per package directions
– ½ cup unsalted butter, softened
– ¾ cup creamy peanut butter
– ½ cup brown sugar
– ½ cup granulated sugar
– 1 egg
– 2 teaspoons vanilla extract
– ½ teaspoon salt
– 1 ½ cups all-purpose flour
– ½ cup Reese’s pieces
– 1 cup chopped Reese’s peanut butter cups
Directions:
1. Preheat the oven to 350°F (175°C). Ensure the pie crust is thawed according to package instructions.
2. Roll out the pie crust and gently place it into a 9-inch pie plate. Optionally, flute the edges of the crust for decoration.
3. In a medium mixing bowl, combine softened butter, creamy peanut butter, brown sugar, and granulated sugar. Use a hand mixer or stand mixer to beat until smooth and creamy.
4. Add the egg and vanilla extract to the peanut butter mixture, beating until well incorporated.
5. Sprinkle in salt and gradually add all-purpose flour, mixing until fully combined and a dough forms.
6. Gently fold in Reese’s pieces and chopped Reese’s peanut butter cups until evenly distributed in the dough.
7. Transfer the peanut butter cookie dough mixture into the prepared pie crust, pressing evenly across the bottom and up the sides.
8. Bake the pie in the preheated oven for about 35 minutes, until the center is set and the crust is golden brown.
9. Once baked, remove the pie from the oven and allow it to cool slightly before serving.
