Mexican Cornbread Taco Casserole
Ingredients:
– 1 lb ground beef
– 1 package taco seasoning
– 2/3 cup water
– 1 can (14.5 oz) diced tomatoes, drained
– 1 can (15 oz) black beans, rinsed and drained
– 1 package (8.5 oz) cornbread/muffin mix
– 1 cup shredded cheddar cheese
– 1/2 cup milk
– 1 egg
– Chopped fresh cilantro for garnish
– Sliced jalapeños for garnish
Directions:
1. Preheat your oven to 400°F (200°C).
2. In a large skillet, brown ground beef over medium-high heat. Drain excess fat.
3. Stir in taco seasoning, water, tomatoes, and black beans. Simmer for 5 minutes until thickened.
4. In a mixing bowl, combine cornbread mix, milk, and egg. Stir until smooth.
5. Pour the meat mixture into a greased 9×13 inch baking dish. Spread the cornbread batter over the meat mixture.
6. Bake in the preheated oven for 20 minutes. Sprinkle shredded cheese on top and bake for an additional 5 minutes or until the cheese is melted and the cornbread is cooked through.
7. Garnish with cilantro and jalapeños before serving.
