Indian Samosas recipe
Ingredients for the Dough:
– 2 cups of all-purpose flour
– 1/2 teaspoon of salt
– 4 tablespoons of oil
– Approximately 1/2 cup of water (adjust as needed for dough consistency)
Ingredients for the Filling:
– 2 large potatoes, boiled, peeled, and mashed
– 1/2 cup of peas (frozen or fresh)
– 1 large onion, finely diced
– 2 teaspoons of garam masala
– 1 teaspoon of ground cumin
– 1 teaspoon of coriander powder
– 1/2 teaspoon of red chili powder (adjust to taste)
– Juice of 1 lemon
– Salt to taste
– Fresh cilantro, chopped
– Oil for frying
Directions:
1. Prepare the Dough: In a large mixing bowl, combine the flour and salt. Add the oil and rub it into the flour until the mixture resembles coarse breadcrumbs. Gradually add water and knead into a stiff dough. Cover and let it rest for at least 30 minutes.
2. Prepare the Filling: In a pan, heat a bit of oil over medium heat. Sauté the onions until translucent. Add the peas, mashed potatoes, garam masala, cumin, coriander, chili powder, and salt. Cook for 5-7 minutes. Turn off the heat and stir in the lemon juice and cilantro. Allow the filling to cool.
3. Assemble the Samosas: Divide the dough into equal portions. Roll each portion into a ball and then roll it out into a circle. Cut the circle in half. Take one half and shape it into a cone, sealing the edge with a little water. Fill the cone with the potato mixture, then seal the open edges.
4. Fry the Samosas: Heat oil in a deep frying pan over medium heat. Fry the samosas in batches until they turn golden brown and crispy. Drain them on paper towels.
5. Serving: Serve the hot samosas with mint chutney or tamarind sauce for dipping.
