Simple Egg Fried Rice
Ingredients:
– 3 cups of cooked rice (leftover rice works best)
– 2 tablespoons of vegetable oil
– 4 large eggs, whisked
– 1 medium onion, finely diced
– 2 cloves of garlic, minced
– 1 cup of thawed frozen peas and carrots
– 2 green onions, thinly sliced
– 3 tablespoons of soy sauce
– 1 tablespoon of sesame oil
– Salt and pepper to taste
Instructions:
1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Pour in the whisked eggs and scramble until just set. Remove the scrambled eggs to a plate and set aside.
2. Add the remaining tablespoon of vegetable oil to the skillet. Sauté the diced onion and minced garlic until the onions are soft and translucent.
3. Increase the heat to high and add the cooked rice, thawed peas, and carrots to the skillet. Stir-fry for a few minutes until the rice is heated through.
4. Return the scrambled eggs to the skillet. Add soy sauce and sesame oil, mixing everything well.
5. Season with salt and pepper to taste. Stir in the sliced green onions just before serving.
