White Chocolate Lemon Truffles:
Ingredients:
– 1 cup of white chocolate chips
– 1/4 cup of butter
– Zest from 1 lemon
– 3 tablespoons of heavy cream
– 1/2 teaspoon of lemon extract
– 2-3 drops of yellow food coloring (optional)
– 1/4 cup of powdered sugar
Instructions:
1. Place white chocolate chips in a medium mixing bowl and set aside.
2. In a small saucepan, melt butter with lemon zest until fragrant. Stir in heavy cream and heat until just about to boil.
3. Pour the cream mixture through a fine-mesh sieve over the white chocolate chips. Add lemon extract and food coloring, if using. Stir until smooth.
4. Chill the mixture in the refrigerator for about 30 minutes until firm.
5. Scoop out portions of the chilled mixture and roll into small balls.
6. Coat the truffles with powdered sugar.
7. Return the truffles to the refrigerator for at least 30 minutes to set.
