No-Sugar Energy Dessert
Ingredients:
Nutty Base:
– 2 cups finely chopped mixed nuts (almonds, pecans, walnuts)
– 1/4 cup unsweetened coconut flakes
– 2 tbsp melted coconut oil
– 1 tsp cinnamon
– 1/4 tsp salt
– 1/4 cup almond flour
Caramel Layer (Sugar-Free):
– 1/2 cup sugar-free caramel syrup
– 1/4 cup heavy cream
– 1/4 tsp sea salt
Cream Cheese Layer:
– 2 cups softened cream cheese
– 1/2 cup sugar substitute (stevia blend)
– 1 tsp vanilla extract
Chocolate Ganache (Sugar-Free):
– 1/2 cup sugar-free dark chocolate chips
– 1/4 cup heavy cream
Topping:
– Whole pecans, almonds, and sugar-free dried cranberries
– Pine nuts for garnish
Directions:
1. Nutty Base: Mix chopped nuts, coconut flakes, melted coconut oil, cinnamon, salt, and almond flour. Press firmly into a greased springform pan and chill for 20 minutes.
2. Caramel Layer: Warm sugar-free caramel syrup and heavy cream in a saucepan until combined. Spread over the chilled nutty base and refrigerate to set.
3. Cream Cheese Layer: Whip cream cheese, sugar substitute, and vanilla extract until smooth. Spread over the set caramel layer.
4. Chocolate Ganache: Melt dark chocolate chips and heavy cream, then pour over the cream cheese layer.
5. Final Touch: Garnish with whole nuts, sugar-free dried cranberries, and pine nuts. Chill for at least 4 hours or overnight before serving.
