Pineapple Delight Bread
Ingredients:
– 2 cups all-purpose flour
– 1 teaspoon baking soda
– 1 teaspoon salt
– 3 oz. cream cheese, softened
– 1 cup granulated sugar
– 3 teaspoons vanilla extract
– 1 large egg, beaten
– 1/2 cup sour cream
– 1 20 oz can crushed pineapple, drained (reserve 2-3 tablespoons of juice for the glaze)
Glaze:
– 1 1/2 cups powdered sugar
– 2-3 tablespoons reserved pineapple juice
Instructions:
1. Preheat oven to 350°F (175°C) and grease a bread pan.
2. In a medium bowl, combine flour, baking soda, and salt.
3. In a separate bowl, beat egg, sugar, cream cheese, and vanilla until smooth.
4. Add the flour mixture into the cream cheese mixture and stir. Then add the sour cream and mix until just combined.
5. Fold in the crushed pineapple.
6. Pour the batter into the prepared pan and bake for 55-60 minutes or until a toothpick inserted in the middle comes out clean.
7. Cool in the pan for about 15-20 minutes, then transfer to a wire rack to cool completely.
8. For the glaze, mix powdered sugar and pineapple juice together until smooth. Drizzle over the cooled bread. Enjoy!
