Slow Cooker Chuck Roast Recipe
Ingredients:
– 2 pounds chuck roast
– 2 cloves garlic
– 8 oz baby carrots
– 16 oz golden potatoes (halved or quartered if large)
– 1/2 cup red wine
– 1 tablespoon herbs and garlic seasoning
– 1 tablespoon olive oil
– 1 tablespoon butter
– 1/2 sweet yellow onion
– 3 cups beef broth
– 1/4 cup tapioca pearls
– 1/4 cup cornstarch
– 2 tablespoons tomato paste
Instructions:
1. Step 1: Season the chuck roast with the herbs and garlic seasoning.
2. Step 2: Heat the olive oil and butter over medium-high heat in a skillet or slow cooker.
3. Step 3: Brown the roast on both sides, then transfer to the slow cooker with the carrots and potatoes.
4. Step 4: Prepare a cornstarch slurry by whisking 1/4 cup of cornstarch with a little broth until smooth.
5. Step 5: Whisk together the tomato paste, onion, red wine, tapioca pearls, and remaining herbs with the remaining beef broth. Pour this mixture into the slow cooker.
6. Cover and cook on low for 8-10 hours until the meat is fork-tender and easily falls apart.
