    Polish Sausage Pasta Casserole

     

    Polish Sausage Pasta Casserole

    Ingredients:
    1.5 lbs of smoked Polish sausage or kielbasa, sliced
    4 cups of penne pasta
    2 tablespoons of butter
    2 tablespoons of flour
    2.5 cups of milk
    1 cup of sour cream
    2 tablespoons of Dijon mustard
    1 teaspoon of garlic powder
    1 jar of sauerkraut, washed and thoroughly drained, 16 ounces
    3 cups of grated Swiss cheese, divided
    Salt and pepper to taste

    Instructions:
    1. Cook the pasta according to package instructions until al dente. Drain and set aside.

    2. In a large saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes, until lightly golden.

    3. Gradually whisk in the milk and bring to a simmer, stirring constantly until the sauce thickens.

    4. Remove the saucepan from heat and stir in the sour cream, Dijon mustard, and garlic powder until well combined.

    5. Preheat the oven to 375°F (190°C).

    6. In a 9×13-inch baking dish, layer half of the cooked pasta, sauerkraut, Polish sausage, and half of the grated Swiss cheese.

    7. Pour half of the sauce over the layers and spread evenly.

    8. Repeat the layers with the remaining ingredients: pasta, sauerkraut, Polish sausage, cheese, and sauce.

    9. Bake the casserole in the preheated oven for 30 minutes or until the cheese is melted and bubbly.

    10. Let it cool for a few minutes before serving.
