Ingredients:
2 pounds russet or Yukon Gold potatoes, scrubbed and cut into 1-inch chunks
⅓ cup unsalted butter, melted (plus extra for greasing the dish)
1 teaspoon kosher salt (adjust to taste)
1 teaspoon dried parsley flakes
Instructions:
Preheat the oven to 425°F (220°C). Place a large stoneware or ceramic baking dish (9×13 inches) in the oven to heat—this is the key to extra-crispy roasted potatoes.
While the dish heats, wash the potatoes thoroughly and cut them into even chunks. Leave the skins on for added texture, flavor, and nutrients.
Melt the butter and stir in the salt and dried parsley so the seasoning is evenly distributed.
