    This easy fideo with potatoes and ground beef is a warm, filling, and budget-friendly one-pan dinner that’s perfect for busy weeknights. Toasted fideo noodles are simmered with seasoned ground beef, tender potatoes, tomato, and aromatics to create a rich, comforting skillet meal with bold homemade flavor.
    It uses simple pantry ingredients, cooks quickly, and delivers a balanced combination of protein, carbs, and vegetables making it a practical and satisfying family recipe.

    Ingredients:

    1 package fideo noodles
    1 package ground beef
    2 potatoes, peeled and diced small
    1 tomato, chopped
    1 onion, finely chopped
    1–2 garlic cloves, minced
    2 chicken flavor bouillon cubes
    2–3 cups water (or broth)
    Salt and pepper to taste
    Optional: cumin, paprika, or chili powder for extra flavor
    Optional: oil for browning

    Instructions:

    In a large skillet or pot, add a little oil and toast the fideo noodles over medium heat until lightly golden, stirring often so they don’t burn.

    Add the ground beef to the pan and cook until browned. Break it apart as it cooks.

    Stir in the chopped onion, garlic, and tomato. Cook for 3–4 minutes until softened and fragrant.

    Mix in the diced potatoes, bouillon cubes, salt, pepper, and optional spices.

    Pour in the water or broth. Bring to a gentle boil, then reduce heat and simmer uncovered for about 12–15 minutes, or until the potatoes are tender and the fideo is fully cooked.

    Let it sit a few minutes to thicken slightly, then serve hot.
