1 teaspoon ground cumin or smoked paprika (for depth)
½ teaspoon turmeric (optional, for color and health benefits)
½ cup heavy cream or coconut milk (for a vegan cauliflower soup)
Salt and black pepper, to taste
Optional Toppings
Fresh parsley, homemade croutons, grated Parmesan cheese, chili oil, or roasted cauliflower florets
Instructions
1. Roast the Cauliflower
Preheat your oven to 425°F (220°C).
Toss cauliflower florets with 2 tablespoons olive oil, salt, and black pepper. Spread evenly on a baking sheet.
Roast for 25–30 minutes, flipping halfway, until golden brown and tender.
2. Sauté the Aromatics
In a large pot, heat the remaining 1 tablespoon olive oil over medium heat.
Add chopped onion and sauté for 5 minutes until soft and translucent.
Stir in garlic and cumin (or smoked paprika) and cook for 1 minute until fragrant.
3. Simmer the Soup
Add the roasted cauliflower and broth to the pot.
Bring to a boil, then reduce heat and simmer for 10 minutes to blend the flavors.

Use an immersion blender (or carefully transfer to a blender) and purée until smooth and creamy.
Stir in the cream or coconut milk.
5. Season & Serve
Taste and adjust salt and pepper as needed.
Serve warm with your favorite toppings.
Pro Tip
For extra depth and warmth, add a pinch of nutmeg, extra smoked paprika, or a swirl of chili oil before serving.
