    Slow Cooker Beef in Black Bean Sauce with Peppers & Onions

    This Slow Cooker Beef in Black Bean Sauce is a rich, savory, and comforting meal packed with tender beef, chunky peppers, and onions simmered in a flavorful soy and black bean sauce. It’s an easy, fuss-free dinner that delivers takeaway-style flavor at home, perfect for busy weeknights or family meals.

    Ingredients:

    500 g chopped beef
    1 red pepper, thickly chopped
    1 green pepper, thickly chopped
    2 large white onions, sliced chunky
    2 tablespoons soy sauce
    1 jar beef and black bean sauce
    200 ml water
    1 teaspoon chili paste (optional, for heat)
    1 beef stock cube
    Cornstarch (to thicken)
    Salt and black pepper, to taste

    Instructions:

    Chop the peppers and onions into nice chunky pieces. Add them to a frying pan with a little oil and sauté briefly until slightly softened. Transfer the vegetables to the slow cooker.

    In the same pan, add the chopped beef and fry until well browned. Do not discard the beef juices this is where the flavor is!

    Add the beef stock cube to the pan with a splash of water and stir well. Pour in the beef and black bean sauce, soy sauce, chili paste, and a pinch of salt and pepper.

    Return the peppers and onions to the pan, mix everything together, then add the remaining 200 ml of water. Let it simmer gently for a few minutes.

    Stir in cornstarch little by little until the sauce reaches your desired thickness. Transfer everything to the slow cooker and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the beef is melt-in-your-mouth tender.

    Serving Suggestions:

    Serve over steamed rice, egg noodles, or fried rice
    Add extra chili paste for a spicy kick
    Garnish with spring onions or sesame seeds
