Ingredients:
1 pound ground beef
1 onion, diced
1 cup diced green chiles
2 teaspoons salt
1 tablespoon ground cumin
8 cups beef broth (homemade preferred)
4 russet potatoes, peeled and diced
1 cup diced tomatoes
Instructions:
In a large stockpot or deep pan, add the ground beef and diced onion over medium heat.
Cook for 5–8 minutes, stirring occasionally, until the beef is mostly browned and the onion is soft.
Stir in the green chiles, salt, cumin, broth, and potatoes. Bring to a gentle boil.
Boil over medium-high heat for 10 minutes, then add the diced tomatoes.
