2 pounds fresh collard greens, washed and chopped
4 cups chicken broth or vegetable broth
1 small onion, diced
2 cloves garlic, minced
1 tablespoon apple cider vinegar
½ teaspoon salt
½ teaspoon black pepper
¼ teaspoon red pepper flakes (optional, for a little heat)
1 teaspoon smoked paprika (optional, for a smoky flavor)
1 tablespoon olive oil or butter
For the Cornbread:
1 cup cornmeal
1 cup all-purpose flour
1 tablespoon baking powder
½ teaspoon salt
1 cup buttermilk
1 egg
¼ cup melted butter
Instructions:
In a large pot, heat olive oil or butter over medium heat. Add onion and garlic, sauté until soft and fragrant.
Pour in the chicken or vegetable broth. Add collard greens a handful at a time, stirring as they wilt.
