    Creamy White Chicken Enchiladas

    These White Chicken Enchiladas are the ultimate comfort food rich, creamy, cheesy, and incredibly easy to make. Soft flour tortillas are filled with tender shredded chicken and Monterey Jack cheese, then smothered in a silky white enchilada sauce made with sour cream and green chilies. Baked until bubbly and golden, this dish delivers big flavor with minimal effort.

    8–10 flour tortillas (soft taco size)
    2 cups cooked, shredded chicken
    2 cups shredded Monterey Jack cheese (divided)

    2 cups chicken broth
    1 cup sour cream
    1 (4 oz) can diced green chilies

    Directions:

    Preheat oven to 350°F (175°C). In a bowl, combine shredded chicken with 1 cup of cheese. Spoon the mixture into tortillas, roll tightly, and place seam-side down in a greased 9×13-inch baking dish.

    Melt butter in a skillet over medium heat. Whisk in flour and cook for 1 minute. Slowly add chicken broth, whisking constantly until smooth and slightly thickened.

    Remove from heat and stir in sour cream and diced green chilies until creamy and fully combined.

    Pour sauce evenly over the enchiladas. Sprinkle with remaining cheese. Bake uncovered for 20–25 minutes, until hot and bubbly.

    Let rest for a few minutes before serving. Pair with Spanish rice, refried beans, or a fresh green salad.
