Easy Sausage and Crispy Potato Skillet

Ingredients:
You will need 500 g potatoes (washed and cubed)
300–400 g sausage (smoked or fresh, sliced)
2–3 tbsp olive oil
1 small onion (thinly sliced)
2 cloves garlic (minced)
1 red or green bell pepper (sliced, optional)
1 tsp paprika
½ tsp dried thyme or Italian seasoning salt
black pepper
and a handful of fresh parsley for garnish.
Instructions:
Heat olive oil in a large skillet over medium heat. Add the potato cubes and cook, stirring occasionally, until they turn golden and start to soften.
Add sliced onion and bell pepper, season lightly with salt and pepper, and cook until the vegetables are slightly caramelized and the potatoes are almost tender.
Stir in the sliced sausage and cook until browned on the edges and fully heated through.
Add minced garlic, paprika, and thyme, tossing everything together so the potatoes and sausage are well coated in the spices. Taste and adjust salt and pepper if needed.
Once the potatoes are soft inside and crispy outside, remove from heat. Sprinkle with chopped fresh parsley and serve hot.
