    For the Creamy Seafood Filling:
    1 tbsp olive oil
    2 tbsp butter
    ½ onion, diced
    2 garlic cloves, minced

    2 cups seafood broth or chicken broth
    1 cup heavy cream
    ½ tsp Old Bay seasoning
    Salt & black pepper, to taste
    1 cup cooked shrimp, peeled & deveined
    1 cup crab meat (lump or claw)
    ½ cup frozen peas
    ½ cup diced carrots
    2 tbsp fresh chopped parsley
    For the Cheddar Bay Biscuit Topping:
    1 package Cheddar Bay biscuit mix
    ½ cup shredded cheddar cheese
    ½ cup cold water
    ¼ cup melted butter
    ½ tsp garlic powder
    Optional: chopped chives for garnish

    Directions:

    Heat olive oil and butter over medium heat. Sauté onion and garlic until soft and fragrant this step builds deep flavor for your creamy seafood pot pie filling.

    Stir in flour and cook for 1 minute. Slowly whisk in broth and heavy cream until smooth. Season with Old Bay, salt, and pepper. Simmer 5–7 minutes until thick and luscious.

    Gently fold in shrimp, crab, peas, carrots, and parsley. Cook just 2 minutes until shrimp turns pink keeping the seafood tender and juicy.

    Mix biscuit mix, cheddar cheese, water, and garlic powder into a soft dough. Spoon over the filling in ramekins or a casserole dish for that classic Cheddar Bay biscuit crust.

    Bake at 400°F (200°C) for 15–18 minutes until biscuits are puffed and golden brown. Brush with melted butter and garnish with chives for a restaurant-style finish.
