Creamy Queso Chicken Fajita Rice

Ingredients:
3 Boneless Skinless Chicken Breasts, diced
2 tbsp Olive Oil
½ Yellow Onion, diced
1 Red Bell Pepper, cut into strips
1 Green Bell Pepper, cut into strips
1 Orange Bell Pepper, cut into strips
1 Packet Fajita Seasoning
2 cups Minute Rice
2 cups Chicken Broth
8 oz Tomato Sauce
Gordos Cheese Dip (or your favorite queso cheese dip)
Directions:
Heat the Oil & Cook Chicken: In a large skillet, heat olive oil over medium-high heat. Add diced chicken and cook until browned and fully cooked (5–7 minutes). Remove and set aside.
Sauté Vegetables: In the same skillet, add diced onion and bell peppers. Cook 5 minutes until tender.
Add Seasoning & Chicken: Sprinkle fajita seasoning over vegetables, stir, and return chicken to skillet.
Cook the Rice: Add Minute Rice, chicken broth, and tomato sauce. Stir, bring to boil, reduce heat, cover, and simmer 5 minutes until rice is tender.
Add Cheese Dip: Remove from heat and stir in Gordos Cheese Dip until creamy and well combined.
Serve & Enjoy: Spoon into bowls and serve hot for a hearty, flavorful, and cheesy meal.
