    Slow Cooker Chili Recipe

    This Slow Cooker Chili Recipe is the ultimate comfort food for fall and winter.     Ingredients:

    1 tbsp olive oil
    2 lbs lean ground beef
    1 large yellow onion, finely chopped
    3 cloves garlic, minced
    2 (14.5 oz) cans diced tomatoes with green chilies
    3 (8 oz) cans tomato sauce
    ½ cup water or beef broth
    2 tbsp chili powder
    2½ tsp ground cumin
    2 tsp paprika
    2 tsp cocoa powder (adds depth & richness)
    1 tsp sugar (balances acidity)
    ½ tsp ground coriander
    Salt & black pepper, to taste
    1 (15 oz) can dark red kidney beans, rinsed
    1 (15 oz) can light red kidney beans, rinsed

    Instructions:

    Heat olive oil in a large skillet over medium-high heat. Add onion and sauté for 3 minutes until softened. Add garlic and cook for 30 seconds until fragrant. Transfer to a 6–7 quart slow cooker.

    In the same skillet, brown the ground beef until fully cooked. Drain excess fat, leaving about 2 tablespoons for flavor.

    Add beef to the slow cooker along with tomatoes, tomato sauce, broth, beans, and all spices. Stir well to combine.

    Cover and cook on LOW for 6 hours (or HIGH for 3–4 hours) until thick, rich, and perfectly blended.
