Shrimp-Stuffed Salmon with Garlic Mashed Potatoes & Roasted Asparagus

Ingredients:
Shrimp-Stuffed Salmon
2 thick salmon fillets (skinless, center-cut)
8 large shrimp, peeled and deveined
¼ cup cream cheese, softened
2 tbsp shredded mozzarella or cheddar cheese
1 tbsp mayonnaise or sour cream
1 garlic clove, minced
¼ cup chopped spinach (fresh or thawed frozen)
½ tsp paprika
½ tsp Old Bay or Cajun seasoning
Salt and black pepper, to taste
1 tbsp olive oil
Garlic Mashed Potatoes
2 medium russet potatoes, peeled and cubed
2 tbsp butter
¼ cup milk or cream
2 cloves garlic, roasted or minced
Salt and pepper, to taste
Roasted Asparagus
1 bunch fresh asparagus, trimmed
1 tbsp olive oil
Salt, black pepper & a pinch of garlic powder
Directions:
In a bowl, combine cream cheese, finely chopped shrimp (reserve a few whole shrimp for topping), shredded cheese, mayo, spinach, garlic, paprika, Cajun seasoning, salt, and pepper. Mix until smooth and creamy.
Cut a deep pocket lengthwise into each salmon fillet. Fill generously with the shrimp mixture and top with reserved whole shrimp if desired. Season the outside with salt, pepper, and paprika.
Drizzle with olive oil and bake at 400°F (200°C) for 15–18 minutes, or until salmon flakes easily and shrimp are fully cooked.
Boil potatoes in salted water for about 15 minutes until fork-tender. Drain, mash with butter, milk, and garlic. Season to taste.
Toss asparagus with olive oil and seasonings. Roast at 400°F (200°C) for 12–15 minutes until tender with lightly crisp edges.
Spoon garlic mashed potatoes onto plates, top with shrimp-stuffed salmon, and serve roasted asparagus on the side. Drizzle pan juices over the salmon for extra flavor.
